		<description><![CDATA[I have always been very fond of and passionate about cooking and experimenting with different ingredients. When I was at school (Outeniqua High, George) I won first prize in a South African Dried Fruit competition for a dish in which I combined dried fruit and new style lean pork. 
Although I have always been passionate about creating good food I realized that there would not be funds for me to train professionally as a chef when I left school. Shortly after school I was employed in Oudtshoorn at the Riempie Hotel where I literally started by washing the dishes and cleaning the floors. I eventually gained good experience in the kitchens of Rosenhof, The Colony at The Queens and the Riempie. 
I have worked in many hotels and guest houses, but through all the years I have never been able to afford official chefs’ training. Something that I am striving for every day.
I also entered a SARIE/Pieter Veldsman competition and reached the final, but I still had no way of paying for accredited chef’s training.
Over the years I have worked asChef de Partie, Sous Chef and Head Chef at places such as Lake Pleasant Hotel, Falconview Manor, Lourensford, Hout Bay Manor, Diaz Beach Hotel &#038; Resort and the Arniston Hotel. I am presently attached to Transkaroo Restaurant in Great Brak River.

<td>GOAT’S   CHEESE MOUSSE</td>

<td>300g   Chevin Goat’s cheese<br />
80 – 150ml cream<br />
100ml whipped cream<br />
2 gelatine leaves<br />
Salt and pepper to tastePrepare 6 plastic moulds by lining them with silicone paper that has been cut   into strips. Place the prepared moulds on a pan which has been lined with   silicone paper.<br />
For the mousse, mix the chevin goat’s cheese and cream in a round mixing bowl   until it has a soft texture. Add salt and pepper to taste.<br />
Soak gelatine leaves in a separate bowl of cold water until soft. Then place   into the microwave oven for approximately 2 seconds until gelatine has   dissolved. Remove from microwave and set aside to cool.<br />
Fold the whipped cream into the cheese and cream mixture and add gelatine.   Put mixture in a piping bag and pipe into prepared moulds until they are   three-quarters full. Cover moulds with cling wrap and put into fridge.PORT POACHED PLUMS<br />
6 plums cut in half<br />
300ml Pink Boplaas Port<br />
Half a cinnamon stick<br />
Two pieces of orange peel<br />
4 tblsp soft brown sugar<br />
150ml water<br />
1½ gelatine leaves<br />
Place all ingredients into a pan with a lid and slowly bring to boil. Once   the liquid starts bubbling, turn the heat as low as you can and let the plums   cook until the sauce thickens. The plums are ready when you can pierce them   with a knife without any resistance. Allow them to cool and cut into quarters   before serving.<br />
Soak 1½ gelatine leaves in cold water and then microwave for approximately 2   seconds. Add 300ml of the plum sauce to the gelatine and allow mixture to   cool down completely. Spoon half set gelatine mixture on top of the set   cheese mixture in the moulds and return moulds to fridge to set.HAZELNUT BRIOCHE<br />
500g cake flour<br />
200g eggs<br />
20g instant yeast<br />
100ml lukewarm milk<br />
250g melted butter<br />
20g salt<br />
20g sugar<br />
150ml shelled hazel nutsPlace hazelnuts on a baking tray and roast in oven until light brown. Put   roasted nuts into a blender and chop nuts into coarse chunks. Place lukewarm   milk, yeast and sugar in a mixing bowl, cover with cling wrap and put aside.<br />
Put flour, salt and melted butter into a separate mixing bowl and while the   mixer is set on a low speed add milk mixture to mixing bowl while mixing   contents throughout. Slowly add eggs to the mixture and gently mix until   dough forms an elastic mixture. Now add the coarsely chopped nuts to the   dough and mix. Form dough and place into a greased loaf tin and cover with   cling wrap. Put pan with dough in a warm place and allow dough to rise to   double its volume.<br />
Bake in a preheated oven for approximately 40 minutes at 170°C. When ready   turn brioche out on a wire rack and allow brioche to cool. When brioche has   cooled down, cut a slice and place it in a warm riffle pan to toast. Brioche   is served with goat’s cheese mousse and port poached plums.</td>

<td>±   250g Hake fillet<br />
Parma ham slices1 pkt mixed green lettuce<br />
5 ea green asparagus<br />
7 ea fine beans<br />
5 eamangetout<br />
3 ea broccoli floretsChermoula dressing<br />
½ bunch flat leaf parsley<br />
½ bunch coriander<br />
5 garlic cloves<br />
1 tblsp paprika<br />
2 tblsp cumin seeds<br />
½ tblsp cayenne pepper<br />
½ red chilli<br />
5 pieces lemon peel<br />
Salt &amp; pepper to taste<br />
± 400ml olive oil<br />
Juice of one lemonPlace all the ingredients for the chermoula dressing in a blender and blend   until finely chopped.Place a pot of water on the stove and bring to boil. Add 10ml salt to the   water. When water boils blanch vegetables until cooked but still firm. Then   remove vegetables from boiling water and place in ice cold water to stop   vegetables from cooking. Drain vegetables and place in fridge until needed.<br />
Remove skin from hake fillet and season fillet with salt and pepper. Flavour   the hake with salt and pepper. Place hake on a baking tray and roll hake up   starting at the head and rolling to the tail. Secure roll with skewer.Place   hake in oven and bake for ± 20 minutes at 180°C until hake is firm. Remove   hake from oven and wrap Parma ham around hake. Secure ham with skewers. Place   wrapped hake back into oven and bake for a further ± 10 – 20 minutes at 180°C   until hake is done.<br />
Put some lettuce, some of the prepared vegetables and some of the chermoula   dressing in a bowl and mix lightly. This mixture is served with the hake   fillet when it is done.</td>

<td>50g   melted butter, for brushing moulds<br />
Cocoa powder, for dusting moulds<br />
200g dark chocolate chopped into small pieces<br />
200g butter in small pieces<br />
200g castor sugar<br />
4 eggs and 4 egg yolks<br />
200g cake flour<br />
2 oranges’ grated peelFirst prepare the moulds. Brush the melted butter all over the insides of the   pudding moulds. Place the moulds in the fridge. Brush some more butter over   the chilled butter and then coat the inside of the mould evenly with a spoon   of cocoa powder. Make sure the the cocoa powder coats the butter completely   and shake the excess powder back into the container.<br />
Place a bowl over a pan of barely simmering water and slowly melt the   chocolate and butter together. Remove bowl from heat and stir until mixture   is smooth. Set aside to cool.<br />
Whisk the eggs and egg yolks together with the sugar in a separate bowl until   the mixture is thick and pale and the whisk leaves a trail. Sift the flour   into the egg mixture and then mix. Add the grated orange peel into the egg   mixture and add the chocolate mixture to the egg mixture in thirds, ensuring   that mixture is combined into a loose cake batter.<br />
Tip the fondant batter into a jug. Evenly divide the fondant batter equally   between the moulds. Cover and chill for at least 20 minutes. This may even be   chilled the night before you intend to serve the dish.<br />
Remove from fridge and bake directly at 180°C for approximately 10 minutesGREEK YOGHURT GELATO<br />
450g Greek Yoghurt<br />
150g whipped cream<br />
150g icing sugar<br />
Zest of 1 lemonCombine the yoghurt, cream, icing sugar and zest in the canister of the ice   cream maker and follow ice cream machine’s operating instructions.</td>

The popularity of food and wine pairings has increased in recent years, so much so that it has become commonplace to adding wine pairing as something special to the usual dining experience.</p>

<p><strong>Highlight</strong>: The return of the hilarious &#8216;Little Poof! Big Bang!&#8217;, a play written by Bruce J. Little. And don&#8217;t miss the gorgeous boys strutting their stuff at the Mr Mardi Gras event on Friday 27 April.</p>
<p><strong>Feel Good Factor</strong>: The Pink Loerie Mardi Gras is raising funds to paint the Loeriehof Old Age Home. It is also raising funds and buying dog and cat food for the Knysna Animal Shelter.</p>
<p>Now in its 12th year, the Pink Loerie Mardi Gras is one of the highlights on South Africa&#8217;s gay and lesbian events calendar and the only carnival of its kind in Africa.</p>
<p>There&#8217;s a multitude of entertainment scheduled that will keep the party alive throughout the festival. Regardless of what shade of pink you are, even if you&#8217;re just a little puce, there&#8217;s bound to be something to keep you stimulated – fine art, fine wine, fine dining, the finest musicians and DJs&#8230;and some very fine boys and girls too.</p>
<p>Among the many highlights of this Knysna gay festival is the Mardi Gras Street Parade, taking place on 30 April 2012 from mid-afternoon, followed by the Mardi Gras prize-giving immediately afterward.</p>
<p>The Pink Loerie Mardi Gras has its serious side too. It was started, in part, to create awareness about HIV/Aids as well as to foster an understanding about gay and lesbian issues.</p>
<p>In this the festival has been a fantastic success, nurturing tolerance and creating awareness both locally and throughout Southern Africa. In accordance with there goals, the Mardi Gras will offer free HIV testing and counselling during the festival.</p>
<p>The Pink Loerie Mardi Gras is a colourful delight for the open-minded so grab your stilettos and get down to the mother of all parties.</p>
<p><strong>What&#8217;s new</strong>: The Pink Loerie Village: ane area with lounges and booths where Pink Loerie attendees can simply hang out. Various liquor companies will be promoting their products here.</p>
<p><strong>History</strong>: The Pink Loerie Mardi Gras started 12 years ago and is the first and only Mardi Gras festival on the African continent. It is also one of the biggest parties in the country.</p>

This is a week packed with exciting events featuring fast cars, classic cars, go karts, soap box races and 4&#215;4 challenges. The highlight of the festival is the Renault Simola Hillclimb, which sees an assortment of exciting cars, from nostalgic greats of a previous era to state of the art exotics, testing both man and machine on the hair-raising climb to the Simola Golf Estate. The Festival is unique in South Africa, incorporating thrilling action on the road with an assortment of events which will ensure that there is entertainment for the whole family in the beautiful town of Knysna.</p>
<p>The Knysna Kart Grand Prix brings day and night street racing to the spectacular Thesen Island Harbour Town.</p>
<p>Classic cars never fail to appeal. There is something about the cars we grew up with which becomes part of us. As much as one admires the high tech wizardry of the latest supercar, it is the raw power and simplicity of a 60’s muscle car which never fails to draw the crowds, or the romance of an era long past reflected in the classic roadster. There will be at least one car at the Knysna Motor Show to make you linger.</p>
<p>The Knysna Speed Festival is not just about high speed racing cars. It also offers exciting opportunities to those who love the outdoors and enjoy testing themselves and their vehicles off road. The Sunday and Wednesday of the Festival week are dedicated to 4&#215;4 enthusiasts. Knysna has some of the most spectacular indigenous forests in South Africa, and during the 4&#215;4 Knysna Elephant Trail, off-roaders will be able to travel through forests not normally accessible to the public. You may be lucky and even see the reclusive Knysna Elephants! This is an eco-friendly event for the whole family and should not be missed if you have an off-road vehicle capable of exploring the wild. It offers 6-7 hours of unique terrain and extraordinary beauty in the company of 4&#215;4 experts who will ensure that nothing goes wrong. The 4&#215;4 Challenge tests the off-road skills of those who enjoy seeking the limits of themselves and their vehicles in tough terrain with daunting obstacles in both standard production vehicles and modified 4&#215;4 specials.</p>
<p>Want to get up close to the exciting vehicles featured during the Speed Festival? All the cars will be on display on Friday at the Waterfront and there will be a parade through the streets during the day.</p>

<p>Oyster-eating, oyster-shucking, oyster farm tours, oyster recipe challenges and gourmet oyster-themed dinners happen throughout the festival, along with wine and champagne tastings.</p>
<p>Besides oysters, the festival hosts 2 top-notch competitive sporting events. The Pick n Pay Weekend Argus Rotary Cycle Tour and the Pick n Pay Cape Times Knysna Marathon are booked up months in advance due to their popularity.</p>
<p>This <strong>lifestyle festival</strong> offers a varied programme of adventure, sports and culture for the whole family, from paddling, golf, bowls, soccer, angling and mountain biking to music concerts, theatre shows, craft workshops, cooking demonstrations and even bridge-playing contests.</p>
<p>Not to be missed is the Hansa Waterfront Rush, a time-based obstacle course set on and in the water. Held at the Knysna Waterfront, it&#8217;s a thrill-a-minute spectacle for spectators and participants alike.</p>
<p>There is a special focus on activities for children at the Pick n Pay Young Oyster Festival. Tots to teens can attend youth theatre and puppet shows, creative art workshops and cooking courses.</p>
<p><strong>What&#8217;s new:</strong> The Negroup Investments Big 5 Challenge presented by Sport24.com involves athletes taking part in 5 different sporting events.</p>
<p><strong>History:</strong> The first Pick n Pay Knysna Oyster Festival took place in 1983. The festival was introduced in an attempt to attract people to this seaside town during the quiet winter period and it has succeeded beyond all expectations.</p>
